Labors of Love

     I'm talking about difficult desserts that are worth the effort.  Like chocolate souffle.  It takes forever and you hold your breath hoping you did everything right, but man is it yumsville.  Or french Macarons, I haven't made them myself ( don't have the guts) but they are registered, card-carrying pains to make...however once you taste them, you know why people bother to make them.  What do you think is the most labor intensive dessert that is actually worth the effort?  No short-cuts or substitutions allowed.  I'm talkin about making things....the hard way.  In my opinion, not everything is worth the effort it takes, or the skill level it requires, but there are some gems out there. ( I love these posts, the ones that cause me to just sit back and think about various desserts...I'm smiling as I write this)  I remember a dinner party at our house that required torching what seemed like 100s of creme brulees until they were just so.  Rest assured they were indeed just so.  I tested for quality myself.  I was always self-appointed "quality control", which everyone though was so cute...everyone that is, except my mother, she never saw the humor nor  the beauty of that sacred appointment.  Though speaking of my mother, she makes a cheesecake that I swear takes two days to create, but it's the type of dessert that makes you close your eyes and sigh when it hits your tongue.  It really is that good, (I'm sure she laces it with crack or something)...  Well now I'm wanting sugar, and Trader Joe's has those French Macarons in the freezer section (well some locations do).  I think I'll snag some and let you know how they stack up.
